Last night, I was fortunate enough to be driving home and listening to NPR’s All Things Considered when the story of Thembi and her diary

was broadcast. The full story was probably 20 minutes long — something that broadcasters outside of the public realm don’t have the guts to do. And it was the most moving piece of journalism that I’ve heard in a long, long, long. Honestly, it’s probably the most moving thing
I’ve heard in a long, long time.
I encourage you to go over and read the story and listen to Thembi speak the word’s herself (you can even download it to MP3). She is a young South African fighting the battle against AIDS. Her first person account puts much needed humanity on the subject of AIDS and the epidemic of this disease that is the number one killer in South Africa. Sure, AIDS was the disease de’ jour in the 90s for us Americans. But now with Susan G. Kormen’s Breast Cancer pink and Lance’s Live Strong bracelets, I fear the monstrosity that is AIDS is more recently lost on us middle class white American’s. We don’t touch AIDS every day. We don’t have friends and family members dying of it around us. (Not most of us, at any rate.) It is easy for us to forget that there are literally thousands and thousands of people dying daily of these disease in other countries. Worse, thousands and thousands more are contracting the disease hourly. A disease that is preventable
. It’s not Cancer. It’s not Alzhimer’s. It’s not Parkinsons or some other horrible genetic disease that sometimes lies in wait regardless of our behaviors and actions. No, AIDS can be prevented. It just takes education. It takes access to birth control. It takes the removal of the shame associated with the disease. It takes protection for young women who are raped by husbands and strangers. Not easy things. Not things than can be “fixed” overnight — but all variable that are, technically, possible. And all possibility starts with education. It starts with knowledge. And it starts with us leaders in the Western world to take care of our brethryn. To donate money and time and energy. Thembi is brave and honest and inspiring. She’s also working to elicit change, to put a face on AIDS and to educate both those in her country and those of us in other countries. The epidemic is real. And she and the people of South Africa need our help.

I’m currently browsing brunch recipes online trying to find something special for Easter brunch and I’m coming across things that are weird and may seem a litte off to non-gourmets. I embrace weird. I’m not scared of much. So, it absolutely kills me when I read recipe reviews going off on the “amount of onions” or saying “you can leave the spinach out, though.” I’m sorry. I just don’t think such people should be allowed to comment on foodie-sites. But that’s just my opinion…
At any rate, this thought had me thinking about the recipe I made earlier last week that I absolutely fell IN LOVE with. However, I keep telling people about it and they keep telling me I’m weird or off. And no one, I repeat: NO ONE wants the recipe. So, you know what? I’m going to post it here.
And don’t be afraid. Go ahead and try it. It’s awesome, I promise. It was even highlight as a “staff favorite” by Cooking Light.

Beet and Leek Salad with Peanut Dressing Speed 2: Cruise Control trailer Suffering Mans Charity aka Ghost Writer full movie
From Cooking Light
The beets, leeks, and dressing can all be prepared and stored separately in the refrigerator up to two days in advance; just let them all come close to room temperature before serving. The dressing gets thicker as it stands, so add more water to thin it if necessary. To avoid staining your hands when rubbing the skins off the beets, wear gloves or rub the beets under running water.
2 medium beets (about 3/4 pound)
Cooking spray
4 cups thinly sliced leek (about 1 pound)
1/2 teaspoon olive oil
1/2 teaspoon salt, divided
1/4 cup water
1 tablespoon fresh lime juice
1 tablespoon creamy peanut butter
1 1/2 teaspoons minced peeled fresh ginger
2 cups alfalfa sprouts
Preheat oven to 425°.
Leave root and 1 inch of stem on beets; scrub with a brush. Place beets on a small baking sheet coated with cooking spray. Bake at 425° for 1 hour or until tender when pierced with a fork. Cool. Trim off beet roots and stem; rub off skins. Cut each beet in half lengthwise; slice each beet half crosswise into 1/4-inch-thick slices.
Combine leek, oil, and 1/4 teaspoon salt on a baking sheet coated with cooking spray; toss well to coat. Bake at 425° for 15 minutes or until tender and just beginning to brown; stir after 8 minutes.
Combine water, lime juice, peanut butter, ginger, and 1/4 teaspoon salt, stirring well with a whisk until smooth.
Arrange 1/3 cup sprouts on each of 6 salad plates; divide the beets and leek evenly among servings. Drizzle about 2 teaspoons dressing over each serving.
Yield: 6 servings

So, I totally broke my Bulova watch yesterday by accidently leaving it in a pocket that eventually led to the washing maching that eventually led to the face of the watch being cracked and busted all to crap.
My diamond, Bulova stainless steel watch that James bought me for Christmas in 2004.
It kind of breaks my heart a little. Here’s to hoping it can be fixed….
